Black Bean Peppermint Brownies
15oz can black beans (drained & rinsed) 2 large eggs (or flax-eggs) 1/4 cup cocoa powder 2/3 cup honey 1/3 cup coconut oil 1/2 tsp baking powder pinch of salt 4 drops peppermint essential oil 3/4 cup chocolate chips. Preheat oven to 350°. Blend all ingredients (except choc chips) until smooth. Pour batter into greased 8x8in pan and stir in 1/2 cup choc chips. Sprinkle remaining 1/4 choc chips on top. Bake for 30-35 minutes or until a toothpick inserted in middle comes out clean. Let cool (and store) in fridge, then cut into pieces. **You might want to try using parchment paper to line the pan before greasing it with coconut oil to avoid sticking/crumbling brownies when cutting them out of the pan. |
Coconut Lime Bites/Bars
1 cup shredded unsweetened coconut 1/4 cup maple syrup 1 Tbsp coconut oil 1/8 tsp salt 4 drops lime essential oil Blend together with mixer, pour into tray, freeze 15 minutes (or longer in fridge). You can adjust the thickness of these bites as desired. Cut up & enjoy |
Wild Orange Yogurt Fruit Dip
1 cup Greek yogurt** 1 Tbsp raw honey 2-3 drops Wild Orange essential oil Mix ingredients together. Adjust honey and EO as desired. Serve with fresh fruit. Enjoy! **I served an adjusted vegan version with Kite Hill's almond milk yogurt, raw blue agave and Wild Orange EO. I personally like the original better but it's not vegan. |
